Meet Your Dietitian 

Valentine Reed-Johnson,mba,rdn

I'm Valentine Reed-Johnson, a Registered Dietitian Nutritionist with over 10 years of clinical experience, including leadership roles at Mount Sinai Hospital and Houston Methodist Hospital. I've spent my career watching what actually works — and what doesn't — when it comes to lasting health change.

At Valentine Nutrition, everything starts with the Mediterranean way of eating: the most research-backed, anti-inflammatory, genuinely delicious approach to nutrition in the world. Not a diet you survive — a lifestyle you actually want to keep.

This is also where I specialize in GLP-1 nutrition support. Medications like Ozempic, Wegovy, and Zepbound are powerful tools — but the medication opens the door. What you eat determines what happens once you walk through it. I help patients protect their muscle, support their gut, and build the nutritional foundation that makes results last — on the medication, and long after.

I work the same way with chronic conditions, hormonal imbalances, gut health, and general wellness: no fad diets, no one-size-fits-all plans, no deprivation. Just a warm, evidence-based partnership built around your life, your labs, and your goals.

Mission

I individualize the Mediterranean way of eating to fit the life you already have — not the other way around.

Through simple, sustainable meal planning, we'll build more fiber, more color, and more real food into your diet — slowly, methodically, and without deprivation. No extreme resets. No giving up the foods you love.

What follows is real, lasting change: more energy, clearer thinking, better sleep, and a sense of well-being that comes from nourishing your body, not restricting it.

This is how health becomes sustainable. This is the Mediterranean way.


 

Week 01.

consultation 

Firstly, we will need at least 45 minutes of your time to meet with you and get to know you. This will include determining your medical history, likes and dislikes, and overall lifestyle. You will discuss your goals and address any questions you might have about the process.

week 02.

Meal plan 

We will provide you with an individualized program that incorporates your personal food preferences and daily schedule. We will provide you with options for tracking your intake to be discussed at next visit.

week 03.

IMPLEMENTATION

We will meet to discuss what is working and what isn’t to determine how to adjust the plan to work best for you. We will also review eating out, parties, traveling and other life disturbances that can effect reaching your goals.

week 04.

follow up

The process is ever changing and adaptive. You will have access to your own personal dietitian for all questions and issues because we believe a positive support system is a crucial component of success.
